    Sorry in advance if this has been gone over already, but Teflon does give off a toxic fume if too hot, it makes you feel like you have a touch of the flu if you breath a little too much of it. It also loses it's non-stick qualities when over heated.

    My choice for non-stick pans is the T-fal Ultimate Enamel. Nice even heating, great non-stick and it even has a red dot in the middle that turns solid when at the proper temperature.

    Did I mention I cook for a living?

    Sort of ironic that we are all concerned about Teflon fumes when we all live in houses full of toxic, off gassing vinyl toys. :twisted:

    One thing I was told when buying enamel cookware is to give a very good inspection to the interior of the pot (I think this would be especially true if you're going to go the factory outlet route.). You want to make sure the interior surface is smooth and there are no bubbles on the surface. When I was searching for my Dutch oven, some of the really cheap ones had verry rough surfaces on the inside. Definitely pass those by..

    I use All-Clad LTD Stainless and Le Creuset enameled cast-iron. I try and stay away from Non-Stick. On the rare occasion that I do, I make sure to never heat it without some sorta oil or liquid in it and to keep it at medium heat.
